自家製バゲ入り 焼き野菜サラダランチ** Roasted veggies salad

バゲット、どんどん焼いています^^

この日は、お野菜をグリルして カリッと焼いた自家製バゲットを 入れてサラダ風
にしました♪ 軽いランチだと、これ1品に デザートをつければ^^満足感大です☆

Roasting vegetables gives them a wonderful new flavor complexity
without adding any fat!! Combining them with homemade crispy
bread make this a rich flavored salad.

この日に焼けたバゲット。最近は、少しスリム化を目指しています^^

Today's my homemade baguette :) I'll eat it with my delicious warm salad.
You can roast whatever vegetables you have on hand, I used onions,
peppers and eggplants with coarse salt, pepper and my favorite herb.

I can say it is really good to eat as it is!!

茄子、パプリカ、玉葱を並べ 軽く塩胡椒して、好みでハーブを添えて焼成。
その間に、焼いたバゲをスライスして 好みでガーリックをこすりつけて両面カリッと焼きます。

I love both fresh veggies and roasted ones!! I feel a sweet crispy piece.

This warm salad makes a great accompaniment to barbecue meats,
but is also substantial enough to enjoy on its own.

焼いたお野菜を器に盛り、ボッコンチー二(小さなモッツアレラチーズ)、トマト、
焼いたバゲと バジルを彩りよく並べ、バルサミコソースをかけていただきます。
バルサミコは、少しとろみのある 甘い風味のものがおススメ♪ これだけで、お野菜を
食べた感ももちろんですが、しっかりパンの風味も楽しめました☆

Add fresh tomatoes, bocconcini and toasted bageutte, then dress
with good quality balsamic vinegar. This salad was nice and easy
to make and it's super tasty and great!! It's non-oil salad and
features plenty of local and seasonal ingredients.

A traditional country-style French bread. The weather is getting warmer,
I used the yeast more less, though the fermentation is getting shorter.

Makes 2 baguettes
* AP flour 250g
* Yeast 1/16tsp
* Salt 1/4tsp
* Water 165g

1. Knead the dough for 2-3 min (bread machine).
2. Place in a bowl and cover with plastic wrap. Leave to rise
until doubled in bulk. The fermentation was 8-10hr in the
room temperature.
3. Gently punch dough down to deflate it and shape into
two oblong baguettes. Let rise for 30 minutes.
4. Use a serrated knife to cut 3-5 small diagonal slits across
the tops of the baguettes, and lightly sprinkle with cool water.
5. Bake 440F in the middle of oven for 25-30 minutes, until
golden brown. Transfer to a rack to cool.

Roasted veggies -serve 2-3-

large Japanese eggplant 1
red pepper and orange pepper each 1/2
onion 1/2
olive oil 2TS
coarser salt and black pepper to taste
herb(I used fresh oregano)

baguette 1
garlic clove 1

bocconcini 12-15
tomato 1
fresh basil

balsamic vinegar 1TS each

1. Preheat oven to 420F (210C).
2. In a small bowl, stir together oregano, olive oil, coarser salt,
and pepper. Toss with vegetables until they are coated. Spread
evenly on a large roasting pan.
3. Roast for 35 to 40 minutes in the preheated oven, until vegetables
are cooked through and browned.
4. Assemble with grilled bread rubbed with garlic , bocconcini,
tomatoes and fresh basil. Drizzle balsamic vinegar. Enjoy!!!
